zing zang

the other day matt texted me and asked me if i could make zing zang meat loaf one day. i thought he was being funny and i think i replied something like sure, when pigs fly. well turns out he was being serious and zing zang is actually a bloody mary mix, haha. i'm going to admit to you now that i loathe bloody marys. they are just gross, so i was a little less than excited when i made this recipe.

BUT, it turned out so good. i don't know if it was because i followed this recipe or because of the mix but it was much juicier, ugh moist if i have to use the word ;) than my usual meat loaf.

Zing Zang Bloody Mary Mix Meat Loaf

5 pounds lean ground beef
1 green pepper, chopped
2 small onions, chopped
1/2 cup chopped fresh parsley
2 tablespoons minced garlic
3 eggs
1 teaspoon seasoned salt
1 cup Zing Zang Bloody Mary Mix
1/3 cup cracker crumbs or oatmeal
Pepper to taste
Sauce: 1 cup ketchup 1 cup Zing Zang Bloody Mary Mix
Combine ground beef , bell pepper, onion, parsley and garlic in large bowl. Mix well. In small bowl, beat eggs, seasoned salt, pepper and Bloody Mary Mix, pour over meat and mix until well combined. Add cracker crumbs or oatmeal and mix with hands until mixture holds its shape, adding more crumbs if necessary. Form into loaf and place on rack in roasting pan.
Combine ketchup and Zing Zang Bloody Mary Mix; set aside.
Place meat loaf in preheated 350 oven and bake for 30 minutes. Pour Zing Zang mixture over meat loaf and continue to bake, basting occasionally, until meat is done. Slice and serve topped with pan juices.
Yield: 10-12 servings



Some changes I made:

used ground turkey instead of beef
did not add the onions, gross!
used oatmeal because my container of bread crumbs was empty, i forgot to buy them again!
ended up cooking the recipe at 450 for about an hour, i am so impatient! and it still turned out fine!


i tried to serve it with a side of ketchup mixed with zing zang sauce and i won't do that again, the sauce was way too spicy and thin. next time i would cook the two together on the oven for a bit. i think cooking/baking makes the zing zang part a little sweeter. 

here's a picture. i forgot to take one while it was whole and i'm not the neatest plater around, but it was yummy so that's all that matters! please note that objects are larger than they appeared on my plate, haha. i looked at this picture and i was like man it looks like i ate half the meat loaf! i wanted to, but i didn't :)


and i served it with red skinned mashed potatoes, skin left on! the best way to eat them :)

YUM! I'm glad you said you didn't like Bloody Mary's because I'm not a fan either! I will definitely have to try this some time!! So glad you shared!
